Our famous Tortills Soup is one of those dishes that Houstonians and our hotel guests can't get enough of! When Chef Maurizio came on board at Quattro his first reaction to seeing Tortilla Soup on the menu was, "I thought we were an Italian restaurant?". Well, as much as we tried to have a full on Italian menu, everyone still requested the Tortilla Soup. So it's one of those special items that we took off the menu, but the locals still know to ask for it and of course our servers always recommend it because it is that good.

100-Mile Dash

Recipe : 100-Mile Dash

This is a drink of the ‘other’ Texas. Eschewing the Lone Star State’s cliché image of cowboys, barbecue and pick-up trucks, the 100-Mile Dash harvests the Texas few people envision. This is the one of expansive citrus orchards, laden with plump Texas Ruby Red grapefruit,  of rolling, green farmlands dotted with the hives of an expanding domesticated honey bee industry, of thriving farmer’s markets piled with locally-grown herbs and of an entrepreneurial company in the suburbs of Houston daring to produce its own special vodka – Dash. The 100-Mile Dash is a drink that’s sweet, sour, smooth and invigorating. A lot like Texas, really.

Who knew something so good could result from a technicality? In 1994 due to a loophole in the trade Act of 1992, a small nucleus of Wagyu Akaushi cows and bulls were brought from Japan to the U.S. in a specially equipped Boeing 747. Today, Akaushi's prized genetics are controlled by a group of Texans and to the delight of discriminating diners, you can find it right here in Quattro.

In case you come upon your own Akaushi beef, here’s Maurizio’s recipe for Lasagna. The Akaushi will just  melt in your mouth.

Its newest, Quattro, strikes me as its best and certainly most lively, rescuing this space from neglect by giving it sunshine, Mondrian-like colors, Murano glass and an Italian chef who knows well the Four Seasons style, having worked with the group since 2000 in hotels from Hawaii to Budapest.
